Tasty and delicious chicken cutlets-an Indian snack

Ingredients & Preperation method of chicken cutlet

Ingredients

Chicken breast(boneless) -1lbs

Onion -1

potatoes -2 big

green chillies- 4-5nos

garlic -5-6 pods

ginger -1inch piece

curry leaves - 1-2 strips

turmeric powder- a pinch

red chilli powder -1tsp

coriander powder -1 tsp

cinnamon stick - 1 inch

cloves - 2-3nos

green cardomom - 1-2nos

fennel seeds --2tsp

bread crumps (made at home or commerial packets)

egg -1

salt-- as required

oil --- as required (if frying in oil)

Prior to preperation

  1. Chop ginger,garlic ,chillies and onion,curry leaves in to very tiny pieces (you can use a vegetable grator for it )
  2. Dry roast fennel seeds ,cardomom,cloves,cinnamon sticks and powder in a blender or grinder
  3. Prepare bread crumps by placing bread pieces in oven to 400F for around 20-30min and powdering it using a blender or by hand ( also can get ready made breadcrumps from store)
  4. Beat the egg using an egg beater or by using a spoon and keep it aside
  5. Cook the potatoes and once cooled down crush it to small pieces (it can be cooked in microwave by keeping for about 6-10 min) or by normally cooking in stove
  6. Cook the chicken pieces using little salt and once cool , mince it with hand or in a blender for about 1-2 min

Cooking

  1. In a thick bottomed pan pour some oil (1tbsp) and keep in stove (medium flame), then add the chopped onion , once the oil is hot and saute it till light brown color
  2. Then add chopped ginger ,garlic and curry leaves and green chillies and saute for 5 min
  3. Add coriander powder,chilly powder,turmeric,and powdered masala (cardomom,cloves,cinnamon and fennel) and saute for 3-4 min
  4. Add required salt and then add crushed potatoes and minced chicken,mix them all very nicely.There should not be any water content in the mixture inorder to make patties.
  5. Then make medium sixed patties out of it of either round or oval shape
  6. Then dip these patties in beaten egg and roll it in bread crumps and keep ( at this stage these can be kept in ziplocs and kept foozen for future use up to 2 weeks or can be cooked at that instant)
  7. Now keep a frying pan with some oil in medium flame ,and fry the cutlets on both sides till brown color (Alternately bake it in oven for around 10 minutes each on both sides at 415F till light brown color).
  8. Tasty and delicious indian cutlets are ready.Try it with tomato ketchup to relish the taste.
